Pizza Pie & Apple Pie that is!
I've been looking forward to making this pie all week! I was supposed to make it on Wednesday, but a certain little boy was having some serious sleeping issues and zapped up all my pie making energy. The sleep issue hasn't subsided, but my desire for pie was greater than the lack of sleep issue today.
I made the best apple pie I think the world has ever seen - or at least, that I've ever experienced in my time on this earth. Scrumptious! There will be pictures shortly to display its beautiful, flaky, sparkling with sugar yumminess. I've always been wary of pies...the crust always stresses me out. Stems back to my childhood...but that's another story for another day. Quite simply, I was amazed with how this pie turned out.

The thought of only having Nathan to share it with made me sad. This pie needed to be made known to more than just the two of us! Thank goodness for spontaneous friends! Matthew & Taryn drove down from Seattle on a moment's notice (or rather, at the words "apple pie") to spend the evening with us.
We made a great homemade pizza for dinner while baby slept (hopefully it won't be the last of his sleeping for the night), and finished the night off with the amazing apple pie a la mode, and coffee.

It was a wonderful, relaxing evening with friends, and my tummy is very happy. I'm sure it will be happy again in the morning when I indulge in another piece of apple pie for breakfast!
