30 Days of Thankfulness ~ Day 10
Today I am thankful for fresh beginnings. Since having to do my diet while I was pregnant with Bradley (you know, the one where I had to cut out all the delicious sweets I'd been craving?) I have yet to get back into eating a lot of the foods I had to cut out. In my pantry were tons of crackers, cereal, snacks...stuff that has gone uneaten and mostly expired because I can't bring myself to finish them now that I know there is a healthier way to eat. That being said, I haven't given up my love of sweet, delicious, baked goods. I have a batch of caramel rolls just about to go in the oven, in fact. I purged my pantry today and we are having a fresh start! No more mindless snacks and unhealthy, bland meals. We're having adventures with our food from now on.
So, I am thankful for the diet I was on. Yes, I complained a lot about it while I was on it, but I was pregnant...I should have been able to eat whatever sounded delicious to me...you don't mess with a pregnant lady's food! It taught me some really fantastic things. First, it opened my eyes to a world of foods I hadn't even thought to use in everyday cooking before - wild rice, beans, quinoa (I'd actually never even seen quinoa before my diet). Second, I started to really question not how many calories were in my food, or how much fat, etc., but wanted to know how this food worked with my body to help me live. Third, I've allowed myself to enjoy the process. I'm learning so much about food as a whole and "whole foods". I've found a new love for veggies, and produce in general. I appreciate so much more the time spent in preparing a meal when I know the source of the food and how it is going to impact my body versus just the idea of trying to limit artificial things. I've become addicted to recipes, and food blogs and love that I can always try new things.
So, while I am hopeful that I will never have to be on the gestational diabetes diet agian, I appreciate the lessons it taught me this time around.

Very cool! Let us know down the road if you notice that you get colds, etc. less often. I learned about quinoa at my Bradley classes, but we never actually bought any until about two months ago. Chad made a delicious quinoa/brown basmati rice/turkey bacon/egg fried rice a few weeks ago that was probably one of the tastiest meals I've ever had. It's amazing how many foods there are out there that we are just now discovering. Share some of the new recipes you are trying!
